Ingredients
- 1kg butternut pumpkin, peeled, cut into 4cm pieces
- 4 small red onions, quartered
- 6 garlic cloves, unpeeled
- 2 tablespoons Alfa One rice bran oil
- 8 (750g) thick pork sausages
- 2 tablespoons small fresh basil leaves
- 1/2 cup shaved parmesan cheese
Method
- Step 1Preheat oven to 180°C/160°C fan-forced. Lightly grease a large baking dish.
- Step 2Place pumpkin, onion and garlic in prepared dish. Drizzle with oil. Toss to coat. Bake for 30 minutes or until vegetables start to soften.
- Step 3Meanwhile, heat a non-stick frying pan over medium heat. Cook sausages, turning, for 5 minutes or until browned.
- Step 4Add sausages to pumpkin mixture. Bake for 20 minutes or until pumpkin is tender and sausages cooked through.
- Step 5Serve topped with basil and parmesan.
