Ingredients

1kg butternut pumpkin, peeled, cut into 4cm pieces

4 small red onions, quartered

6 garlic cloves, unpeeled

2 tablespoons Alfa One rice bran oil

8 (750g) thick pork sausages

2 tablespoons small fresh basil leaves

1/2 cup shaved parmesan cheese
Method

Step 1Preheat oven to 180°C/160°C fan-forced. Lightly grease a large baking dish.

Step 2Place pumpkin, onion and garlic in prepared dish. Drizzle with oil. Toss to coat. Bake for 30 minutes or until vegetables start to soften.

Step 3Meanwhile, heat a non-stick frying pan over medium heat. Cook sausages, turning, for 5 minutes or until browned.

Step 4Add sausages to pumpkin mixture. Bake for 20 minutes or until pumpkin is tender and sausages cooked through.

Step 5Serve topped with basil and parmesan.
