This quick and easy low-fat chicken main will be your new favourite weeknight meal!
Ingredients
- 1 tablespoon Alfa One rice bran oil
- 500g lean chicken mince
- 1/2 x 600g packet frozen stir-fry vegetables with garlic and ginger
- 227g can water chestnuts, drained, sliced
- 50g fried noodles
- 4 green onions, thinly sliced
- 2 baby cos lettuce hearts, leaves separated (see tip)
Method
- Step 1Heat a wok over high heat. Add half the oil. Swirl to coat. Add mince. Cook, stirring, with a wooden spoon to break up mince, for 8 minutes or until browned. Transfer to a bowl. Cover to keep warm. Add remaining oil to wok. Swirl to coat. Add vegetables. Stir-fry for 4 minutes or until tender.
- Step 2Return mince to wok. Add flavour sachet from vegetable packet and water chestnuts. Stir-fry for 2 minutes or until heated through. Remove from heat. Stir in noodles and onion. Spoon mince mixture into lettuce leaves. Serve.
