Need dinner, and need it now? It’s easy, thanks to this dinner in a dash. Simply buy some oven-ready salmon burgers and jazz them up in these tasty tortillas.
Ingredients
- 2 teaspoons extra virgin olive oil
- 400g packet Tassal frozen dill and chives salmon burgers
- 1/3 cup mayonnaise
- 1 tablespoon lemon juice
- 2 teaspoons fresh dill leaves, chopped
- 1 avocado, sliced
- 1 Lebanese cucumber, peeled into ribbons
- 1/2 cup fresh mint leaves
- 1 cos lettuce heart, leaves separated, torn
- 8 flour tortillas, warmed
- Lemon wedges, to serve
Method
- Step 1Heat oil in a large frying pan over medium heat. Cook salmon burgers for 4 minutes each side or until golden and cooked through. Cut into thick slices.
- Step 2Combine mayonnaise, lemon juice and dill in a bowl. Season with salt and pepper.
- Step 3Arrange burger slices, avocado, cucumber, mint and lettuce on a serving board. Serve with dressing, tortillas and lemon wedges.
