Just a few simple ingredients are needed to create this tasty pasta dinner.
Ingredients
- 375g spaghetti
- 2 teaspoons olive oil
- 2 red capsicums, thinly sliced
- 150g shaved salami, chopped
- 190g jar rocket pesto
- rocket leaves, to serve
Method
- Step 1Cook pasta in a saucepan of boiling, salted water, following packet directions, or until al dente (approx. 12 minutes). Drain.
- Step 2Meanwhile, heat oil in a large frying pan over medium heat. Add capsicum. Cook, stirring, for 5 minutes or until softened. Add salami. Cook, stirring, for 5 minutes or until just browned.
- Step 3Add pesto to capsicum mixture. Cook, stirring, until heated through. Add pasta and toss to combine. Serve topped with rocket leaves.
