Aromatic saffron rice is the traditional accompaniment to spicy Indian curries.
Ingredients
- 3 cups Basmati rice
- Pinch of saffron threads
- Fresh coriander leaves, to serve
Method
- Step 1Place rice and 4 cups cold water in a medium heavy-based saucepan over high heat. Add saffron. Stir to combine. Cover. Bring to the boil. Reduce heat to low. Simmer for 10 minutes or until liquid is absorbed.
- Step 2Fluff rice with a fork. Set aside, partially covered, for 5 minutes. Serve sprinkled with coriander.
