Use your barbecue to chargrill zucchini. They make a great side dish and are budget-friendly too.
Ingredients
- 2 tablespoons olive oil
- 3 zucchini, ends trimmed, cut diagonally into 1cm-thick slices
- 2 red onions, halved, cut into wedges
- 1 1/2 cups fresh continental parsley leaves
- 2 tablespoons red wine vinegar
Method
- Step 1Preheat a barbecue grill or chargrill on medium-high. Brush with the oil to grease. Add the zucchini and cook for 2 minutes each side or until lightly charred. Transfer to a serving bowl. Add the onion to the grill and cook for 2 minutes each side. Transfer to the bowl.
- Step 2Add the parsley and vinegar to the zucchini mixture and toss to combine. Season with salt and pepper to serve.

Make it ahead: Prepare this recipe to the end of step 1 up to 1 day ahead. Cover and store in the fridge. Continue from step 2 just before serving.
