This sweet sorbet is ready to eat in only 5 minutes!
Ingredients
- 500g packet frozen raspberries
- 2 tablespoons fresh mint leaves, torn
- 1 1/2 cups chilled apple juice
- Extra fresh mint leaves, to serve
Method
- Step 1Place raspberries, mint leaves and 1 cup apple juice in a food processor. Process, gradually adding remaining apple juice, until smooth and combined, scraping down sides of processor occasionally.
- Step 2Working quickly, scoop mixture into serving glasses. Serve sprinkled with extra mint leaves.

Notes
If you don’t like the raspberry seeds, push the mixture through a sieve. You will then need to freeze the mixture for around 10 minutes to allow it to firm up again. Add a grown-up element to the sorbet by replacing apple juice with orange juice and adding a dash of white rum to make a frozen daiquiri.
