Author Notes: I grew up eating my grandmother’s fresh baked bread, smeared with salted butter and slices of crispy radishes. Using that as inspiration, I created this Radish and Basil Compound Butter that is so simple to make and quite beautiful with the pink and green flecks. Makes: 1/2 cup of butter
small breakfast radishes, minced
fresh basil leaves, minced
teaspoon sea salt, or more to taste
cup unsalted butter, softened
- In a medium sized bowl, stir radishes, basil and sea salt into softened butter. Using the back of fork works well to combine all of the ingredients. Adjust salt as needed.
- On a piece of parchment or wax paper, form the butter into a 1-inch wide log. Wrap the paper around the butter, pressing gently to make a smooth log, and roll to seal. Place in the refrigerator until ready to use.
- Unwrap the compound butter when ready to use and spread on bread or crackers, or serve over warm foods like meat or pasta to melt.
