For a quick, easy and delicious dinner, stuff large field mushrooms with a mixture of Mediterranean-style beans, feta and pine nuts.
Ingredients
- 4 large field mushrooms, stems trimmed
- 2 tablespoons extra virgin olive oil
- 420g can Heinz® Beanz Creationz™ Mediterranean Style Beanz
- 50g reduced fat feta
- 1 tablespoon pine nuts
- 8 small thyme sprigs
- Radicchio salad, to serve
Method
- Step 1Preheat oven to 200C/180C fan-forced. Line a baking tray with baking paper. Lay the mushrooms on the tray, stalk side up, and drizzle with oil. Bake for 5 – 8 minutes.
- Step 2Divide the Beanz Creationz™ between the mushrooms. Crumble over feta. Top with pine nuts and thyme sprigs. Bake for another 10 minutes, until mushrooms are tender and feta golden.
- Step 3Serve with radicchio salad.
