Who’s up for a hot-from-the-oven pizza with goumet Italian toppings? Put the call in to the family then get set for a great night.
Ingredients
- 350g butternut pumpkin, peeled, cut into 1.5cm pieces
- 2 teaspoons olive oil
- 30cm bought pizza base
- 2 tablespoons pizza sauce
- 40g (1/3 cup) grated mozzarella
- 100g sliced prosciutto, halved
- 75g fresh ricotta, crumbled
Method
- Step 1Preheat oven to 200C. Combine the pumpkin and oil on a baking tray. Season. Roast, stirring once, for 20 minutes or until golden and tender.
- Step 2Increase oven to 220C. Grease and preheat a pizza tray. Spread pizza base with pizza sauce. Sprinkle with mozzarella. Top with the pumpkin, prosciutto and ricotta. Bake on tray for 15 minutes or until the base is crisp.
