Win them over with this combination of salt, sweet and tart.
Ingredients
- 2 sheets puff pastry, thawed
- 1/4 cup basil pesto
- 250g punnet cherry tomatoes, halved
- 8 slices prosciutto, halved
- 120g goat's cheese, crumbled
- Micro salad or torn basil leaves, balsamic vinegar, to serve
Method
- Step 1Preheat oven to hot, 200C. Line 2 baking trays with baking paper.
- Step 2Place one pastry sheet on each tray. Spread each with pesto and top evenly with tomatoes and prosciutto.
- Step 3Bake for 10-15 minutes until golden and puffed. Dot with goat cheese and cut each pastry square into quarters. Top with salad or basil leaves. Serve drizzled with balsamic vinegar.
Notes
If you only have shortcrust pastry, you can use this in place of the puff.
Sliced tomatoes can be used in place of cherry tomatoes.
