Shell out less at the prawn broker for this handy, versatile meal solution.
Ingredients
- 1/2 cup whole-egg mayonnaise
- 2 tablespoons lemon juice
- 1 1/2 tablespoons tomato paste
- 1 1/2 teaspoons worcestershire sauce
- 1 small iceberg lettuce, cut into wedges
- 50g baby rocket
- 2 medium avocados, sliced
- 1 medium mango, sliced
- 750g medium cooked tiger prawns, peeled, tails intact, deveined
Method
- Step 1Combine mayonnaise, lemon juice, tomato paste, worcestershire sauce and 1 1/2 tablespoons cold water in a bowl. Season with salt and pepper.
- Step 2Arrange lettuce, rocket, avocado, mango and prawns on a platter. Serve with mayonnaise mixture.

Notes
