Make the most of ingredients at hand with this clever, quick solution side.
Ingredients
- 750g can tiny taters potatoes, drained, diced
- 3 gherkins, chopped
- 2 green onions, thinly sliced
- 1 tablespoon capers, drained, chopped
- 2 hard-boiled eggs, finely chopped
- 310g can corn kernels, drained, rinsed
- 2 tablespoons chopped fresh flat-leaf parsley leaves
- 1/4 cup caesar dressing
Method
- Step 1Place potato, gherkin, onion, capers, egg, corn and half the parsley in a large bowl. Add dressing. Season with salt and pepper. Toss gently to combine. Serve topped with remaining parsley.
