Thin slices of rare roast beef, sweet onion jam and oozy mozzarella take the humble cheeseburger to new heights.
Ingredients
- 2 garlic cloves, finely chopped
- 1/2 teaspoon dried chilli flakes
- 2 teaspoons thyme leaves
- 1/4 cup (60ml) olive oil
- 400g piece beef eye-fillet, trimmed
- 4 roma tomatoes, halved
- Onion jam (see notes), to serve
- 4 crusty bread rolls, split, toasted
- 2 cups rocket
- 2 x 125g balls buffalo mozzarella (see notes) or bocconcini, torn
- 1/2 cup (150g) aioli (see notes) or whole-egg mayonnaise
- 1/2 cup (40g) shaved parmesan
Method
- Step 1Preheat the oven to 120°C. Combine garlic, chilli flakes, 1 teaspoon thyme and 2 tablespoons oil in a bowl and season. Add beef, turning to coat well, then stand at room temperature for 1 hour to marinate.
- Step 2Place tomatoes, cut-side up, on a baking tray and drizzle with remaining 1 tablespoon olive oil. Season and sprinkle with remaining 1 teaspoon thyme. Roast for 1 hour or until tender, then set aside to cool.
- Step 3Increase the oven to 200°C.
- Step 4Heat an ovenproof frypan over high heat. Sear beef, turning, for 3-4 minutes until browned on all sides. Transfer to the oven and roast for 10-12 minutes for medium-rare or until cooked to your liking. Rest, loosely covered with foil, for 10 minutes, then thinly slice.
- Step 5To serve, spread onion jam on the base of each roll. Top with tomato, beef, rocket and mozzarella. Drizzle with aioli and top with parmesan, then replace bun top.
