Ingredients
- 600g pork fillet, trimmed, halved crossways
- 1/3 cup mirin (see note)
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 3cm piece fresh ginger, grated
- 4 green onions, thinly sliced diagonally
- 2 x 200g packets udon noodles (fresh or dried)
Method
- Step 1Place pork pieces into a shallow ceramic dish. Combine mirin, vinegar, soy sauce, ginger and three-quarters of the onions in a jug. Pour over pork. Cover. Refrigerate for at least 1 hour, or overnight if time permits.
- Step 2Preheat oven to 200°C. Line a baking tray with baking paper. Remove pork from marinade, reserving marinade. Place onto tray. Bake for 30 minutes or until cooked to your liking. Cover. Stand for 5 minutes.
- Step 3Meanwhile, pour marinade into a small saucepan over medium heat. Cook, stirring, for 5 to 8 minutes or until sauce comes to the boil and thickens slightly.
- Step 4Cook noodles, following packet directions.
- Step 5Thinly slice pork. Divide noodles between serving bowls. Top with pork slices. Spoon over marinade. Sprinkle with remaining green onions. Serve.

Notes
Mirin is a sweet rice wine. Look for it in supermarkets or in Asian grocery stores.
