Keep everyone happy with two pork meals designed to please both kids and adults!
Ingredients
- 2 tablespoons olive oil
- 1 red onion, halved, cut into thin wedges
- 2 tablespoons brown sugar
- 1 tablespoon white balsamic vinegar
- 3 granny smith apples, peeled, quartered, cored, cut into thin wedges
- 1/4 cup sultanas
- 30g baby cos lettuce leaves
- 2 tablespoons whole-egg mayonnaise
- 2 tablespoons Tamar Valley Greek Style Yoghurt
- 1/4 cup plain flour
- 1 egg, lightly beaten
- 1 cup dried multigrain breadcrumbs
- 4 (600g total) pork leg steaks
- Salad leaves, to serve
Method
- Step 1Heat half the oil in a nonstick saucepan over medium heat. Add onion. Cook, stirring, for 5 minutes or until softened. Add sugar, vinegar, 1 tablespoon cold water and two-thirds of the apple. Season with salt and pepper. Stir to combine. Cover. Bring to a simmer. Reduce heat to medium-low. Cook, stirring, for 10 to 12 minutes or until apple is tender. Remove from heat. Cover to keep warm.
- Step 2Place flour on a plate. Season with salt and pepper. Place egg in a bowl. Place breadcrumbs on a plate.
- Step 3Toss half the steaks in flour mixture. Transfer to a plate. Cut remaining steaks into thick strips. Toss strips in flour mixture. Dip in egg, shaking off excess. Toss in breadcrumbs. Transfer to a plate. Heat remaining oil in a non-stick frying pan over medium heat. Cook whole steaks for 2 to 3 minutes each side or until browned and cooked through. Transfer to a plate. Cover to keep warm. Add steak strips to pan. Cook for 1 to 2 minutes each side or until browned and cooked through. Transfer to a plate lined with paper towel.
- Step 4Season whole steaks with salt and pepper. Serve with balsamic apples and salad leaves.

Notes
Serves 2 adults. Use remaining ingredients for kid’s crumbled pork variation.
Variation for kids: Crumbed pork with apple salad: Combine sultanas, lettuce and remaining apple in a bowl. Combine mayonnaise, yoghurt and 1 tablespoon cold water in a jug. Season with salt and pepper. Drizzle mayonnaise mixture over sultana mixture. Toss gently to combine. Refrigerate until required. Follow steps 3 and 4 of Pork with balsamic apples. Serve steak strips with sultana mixture. Serves 2 children.
