Low on time – and ingredients? Takeaway isn’t the answer. instead, grab just four key groceries and turn them into this amazing meal.
Ingredients
- 750g (about 6) small Red Rascal potatoes (see note)
- 3 large Pink Lady apples, quartered, cored
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh rosemary
- 900g Pork Rib Roast
Method
- Step 1Preheat oven to 180°C. Cut the potatoes into thin wedges. Cut each apple quarter in half lengthways.
- Step 2Combine the potato, apple, oil and rosemary in a large baking dish. Season with salt and pepper.
- Step 3Season the pork with salt and pepper. Place in the centre of the baking dish. Bake for 35-40 minutes or until the potato and apple are golden and the pork is lightly browned and cooked through.
- Step 4Thickly slice the pork and serve with the potato and apple.
