Ingredients
- olive oil cooking spray
- 4 (150g each) pork cutlets, trimmed
- 2 teaspoons Tuscan seasoning
Greek salad
- 60g baby spinach
- 3 small tomatoes, cut into wedges
- 100g feta, chopped
- 1/3 cup kalamata olives
- 3 teaspoons balsamic vinegar
- 1 teaspoon olive oil
Method
- Step 1Spray a barbecue plate or chargrill with oil. Heat over medium-high heat. Spray both sides pork with oil. Sprinkle with seasoning. Cook pork for 4 minutes each side for medium or until cooked to your liking.
- Step 2Meanwhile, make Greek salad: Combine spinach, tomato, feta, olives, vinegar and oil in a bowl. Season with salt and pepper. Toss to combine. Serve pork with salad.
