Have dinner on the table in 30 minutes with this quick and easy pork and vegetable stir-fry.
Ingredients
- 1/3 cup almonds (skins on)
- 2 tablespoons peanut oil
- 650g pork fillets, thinly sliced
- 2 garlic cloves, sliced
- 1 carrot, thinly sliced
- 150g snow peas, trimmed
- 3 green onions, cut into 3cm lengths
- 1 tablespoon sweet sherry
- 2 tablespoons soy sauce
- 2 teaspoons caster sugar
- 1 cup beansprouts, trimmed
- Steamed jasmine rice, to serve
Method
- Step 1Heat a wok over high heat until hot. Add almonds. Stir-fry for 2 to 3 minutes, or until hot. Remove to a plate. Heat 3 teaspoons of oil in wok. Add half the pork. Stir-fry for 2 minutes, or until browned. Remove to a plate. Repeat with oil and remaining pork.
- Step 2Heat remaining 2 teaspoons of oil in wok. Add garlic and carrot. Stir-fry for 1 minute. Add snow peas and green onions. Stir-fry for 1 minute. Place sherry, soy sauce and sugar into a jug. Whisk with a fork to combine. Add to wok with pork. Stir-fry for 2 minutes, or until heated through.
- Step 3Add almonds and beansprouts to wok. Toss until well combined. Serve with rice.
