Ingredients
- 1/2 cup (125ml) water
- 1/4 cup (55g) brown sugar
- 1 vanilla pod, split, seeds scraped
- 1/2 pineapple, peeled, quartered, thinly sliced
- 2 kaffir lime leaves, finely shredded
Method
- Step 1Combine the water, sugar and vanilla in a small saucepan over low heat. Cook, stirring, for 1 minute or until sugar dissolves. Increase heat to high and bring to the boil. Cook for 1-2 minutes or until syrup thickens. Remove from heat.
- Step 2Place pineapple and lime leaves in an airtight container. Pour over the warm syrup. Place in the fridge for at least 2 hours to chill, and to allow flavours to develop.
