Refresh yourself with some pineapple and lime ice-blocks – the whole family will love them.
Ingredients
- 3 cups diced fresh pineapple (see note)
- 1/4 cup green cordial
Equipment
- You’ll need a 6-hole, 60ml-capacity (each) ice-block mould.
Method
- Step 1Place pineapple and cordial in a food processor or blender. Process until smooth. Strain mixture into a jug. Discard pulp.
- Step 2Pour mixture into an 6-hole, 60ml-capacity (each) ice-block mould, leaving 5mm for expansion when freezing. Place lids on moulds. Freeze overnight or until firm.

Notes
You’ll need a 500g piece of fresh pineapple.
Preparation time excludes overnight freezing time.
For a pine-lime splice, soften vanilla ice-cream. Spoon 2 tablespoons into the base of each ice-cream mould. Secure sticks. Freeze until firm. Top with half a quantity of pineapple mixture. Freeze.
Give these a Thai touch with fresh lime juice and a splash of coconut milk.
