Finish off your weekend barbecue with these pikelets with mascarpone and strawberries.
Ingredients

Olive oil cooking spray

8 pikelets, purchased

2/3 cup mascarpone cheese

250g strawberries, hulled, quartered

1 tablespoon brown sugar
Method

Step 1Spray 4 sheets of foil with oil. Wrap 2 pikelets in each piece of foil.

Step 2Preheat barbecue plate on high heat. Reduce heat to medium. Cook pikelet parcels for 2 minutes each side or until pikelets are heated through.

Step 3Spread mascarpone evenly over warm pikelets. Top with strawberries.

Step 4Sprinkle with sugar. Serve.
