Finish off your weekend barbecue with these pikelets with mascarpone and strawberries.
Ingredients
- Olive oil cooking spray
- 8 pikelets, purchased
- 2/3 cup mascarpone cheese
- 250g strawberries, hulled, quartered
- 1 tablespoon brown sugar
Method
- Step 1Spray 4 sheets of foil with oil. Wrap 2 pikelets in each piece of foil.
- Step 2Preheat barbecue plate on high heat. Reduce heat to medium. Cook pikelet parcels for 2 minutes each side or until pikelets are heated through.
- Step 3Spread mascarpone evenly over warm pikelets. Top with strawberries.
- Step 4Sprinkle with sugar. Serve.
