Instead of cooking one dish for the kids and another for the adults, just divide the recipe at the last step to make fab kid-friendly and adult-friendly meals. (see notes)
Ingredients
- 400g penne rigate
- 1 tablespoon olive oil
- 2 (250g) chorizo sausages, halved lengthways, chopped
- 100g rindless shortcut bacon rashers, chopped (for child-friendly version – see notes)
- 1 medium red onion, finely chopped
- 2 garlic cloves, crushed
- 2 cups tomato passata sauce
- 1/2 cup light thickened cream
- 25g baby spinach (for child-friendly version – see notes)
- 3/4 cup grated reduced-fat mozzarella cheese (for child-friendly version – see notes)
- 30g baby rocket
Method
- Step 1Cook pasta in a large saucepan of boiling, salted water following packet directions until tender. Drain.
- Step 2Meanwhile, heat 1 teaspoon oil in a non-stick frying pan over medium heat. Add chorizo. Cook, stirring, for 4 to 5 minutes or until crisp. Place on a plate lined with paper towel. Wipe pan clean. Return to medium heat. Add 1 teaspoon oil to pan. If making children’s version, cook bacon for 3 minutes or until golden. Place on a plate lined with paper towel.
- Step 3Heat remaining oil in a large saucepan over medium heat. Add onion and garlic. Cook, stirring, for 3 minutes or until tender. Add tomato sauce and cream. Season with salt and pepper. Stir to combine. Return pasta to pan. Cook, stirring, for 4 to 5 minutes or until heated through.
- Step 4Add chorizo to remaining pasta in pan. Cook, stirring, for 2 minutes or until heated through. Remove from heat. Add rocket. Toss to combine. Spoon pasta into bowls. Season with pepper. Serve.

Notes
Serves 2 adult meals and 2 children’s meals.
Variation for children: Cheesy pasta with bacon and spinach: Grease two 2 cup-capacity ovenproof dishes. Preheat grill on high. Transfer half the pasta to a heatproof bowl. Add bacon and spinach. Toss to combine. Spoon mixture into prepared dishes. Top with cheese. Grill for 2 to 3 minutes or until cheese is golden and melted. Serve.
