Ingredients
- 3 william or beurre bosc pears, quartered and cored
- 1 tablespoon olive oil, plus 1/4 cup (60ml) olive oil
- 80g walnut pieces
- 1/4 cup (60ml) white balsamic vinegar
- 2 tablespoons honey
- 80g wild or baby rocket
- 150g blue cheese
- Salt, to season
Method
- Step 1Preheat oven to 220°C. Place 3 william or beurre bosc pears, quartered and cored, on baking tray. Drizzle with 1 tablespoon olive oil and season. Bake for 20-25 minutes.
- Step 2Warm 1/4 cup (60ml) olive oil over medium heat. Add 80g walnut pieces and cook for 3-5 minutes. Set aside.
- Step 3Add 1/4 cup (60ml) white balsamic vinegar and 2 tablespoons honey to walnut mixture, stir and season. Divide 80g wild or baby rocket among plates, top with pears and crumble over 150g blue cheese. Drizzle with dressing.
