Peach and ham salad with blue cheese croutons
Peach and ham salad with blue cheese croutons

Chill out with this no-cook peach and ham salad which takes the heat out of the summertime kitchen.

Ingredients

  • 30cm baguette bread, ends trimmed
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 100g mixed salad leaves
  • 3 radishes, trimmed, thinly sliced
  • 200g sliced leg ham
  • 8 canned peach halves, cut into wedges
  • 75g blue castello cheese

Method

  • Step 1
    Preheat grill on high. Cut baguette into 2cm-thick slices. Place in a single layer on a baking tray. Grill for 1 minute each side or until golden.
  • Step 2
    Combine vinegar and oil in small bowl. Place salad leaves, radish, ham and peach in a large bowl. Drizzle with dressing. Season with salt and pepper. Toss gently until well combined. Divide between plates.
  • Step 3
    Spread toasted baguette with blue cheese. Serve with salad.

Notes
