Chill out with this no-cook peach and ham salad which takes the heat out of the summertime kitchen.
Ingredients
- 30cm baguette bread, ends trimmed
- 2 tablespoons white balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 100g mixed salad leaves
- 3 radishes, trimmed, thinly sliced
- 200g sliced leg ham
- 8 canned peach halves, cut into wedges
- 75g blue castello cheese
Method
- Step 1Preheat grill on high. Cut baguette into 2cm-thick slices. Place in a single layer on a baking tray. Grill for 1 minute each side or until golden.
- Step 2Combine vinegar and oil in small bowl. Place salad leaves, radish, ham and peach in a large bowl. Drizzle with dressing. Season with salt and pepper. Toss gently until well combined. Divide between plates.
- Step 3Spread toasted baguette with blue cheese. Serve with salad.
