Pea, ham and ricotta pasta

Serves: 4
Cooking time: 15 minutes

Ingredients

  • 375g dried large spiral pasta
  • 1 cup frozen peas
  • 25g butter, finely chopped
  • 4 green onions, finely chopped
  • 150g sliced leg ham, chopped
  • 200g fresh ricotta cheese, crumbled

Instructions

  • Step 1
    Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender, adding peas for last 3 minutes of cooking. Drain, reserving 1/4 cup cooking liquid.
  • Step 2
    Return pasta and peas to pan. Add butter, onion, ham, reserved liquid and ricotta. Toss until butter has melted and pasta mixture is combined. Season with salt and pepper. Serve.
