This beautiful pavlova dessert is cleverly put together for you to please with ease!
Ingredients
- 8 pavlova nests
- 1 large mango, peeled, diced
- Double cream, to serve
Passionfruit curd
- 1 egg
- 1 egg yolk
- 1/4 cup caster sugar
- 2 passionfruit, halved
- 50g butter, chopped
Method
- Step 1Place egg, egg yolk and sugar in a heavy-based saucepan. Whisk to combine. Add 1/4 cup passionfruit pulp and butter. Place over medium heat. Cook, stirring with a wooden spoon, for 7 to 8 minutes or until mixture coats the back of spoon. Remove from heat. Stand for 5 minutes. Pour into a bowl. Cover surface with plastic wrap. Cool completely.
- Step 2Spoon 1 tablespoon passionfruit curd into each nest. Top with cream and mango. Serve.
