Here is a new way with a vegie that is ready to broc!
Ingredients
- 750g broccoli, cut into florets
- 3 garlic cloves, thinly sliced
- 2 tablespoons Alfa One rice bran oil
- 2 teaspoons finely grated lemon rind
- 1 tablespoon lemon juice
- 1 1/2 tablespoons pine nuts, toasted
- 1/4 cup shaved romano cheese
Method
- Step 1Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper. Place broccoli, garlic and oil in a bowl. Toss to combine. Transfer to prepared tray. Bake for 20 to 25 minutes or until tender.
- Step 2Remove from oven. Transfer to a platter. Add lemon rind, lemon juice, pine nuts and cheese. Season with salt and pepper. Toss to combine. Serve.
