Ingredients
- 1/4 cup arborio rice
- 1 cup skim milk
- 1 egg
- 1 tablespoon caster sugar
- 1 teaspoon vanilla essence
- 1 orange, rind finely grated
- 400g can sliced peaches, drained
Method
- Step 1Bring 1 cup cold water to the boil in a small, heavy-based saucepan over high heat. Add rice and cook, stirring, for 5 to 7 minutes or until rice has absorbed water. Remove from heat.
- Step 2Place milk, 1/2 cup cold water, egg, sugar, vanilla and orange rind in a bowl. Whisk until well combined. Stir mixture into rice.
- Step 3Return pan to medium-low heat. Cook, stirring often, for 20 minutes or until thick (do not boil). Cover and stand for 5 minutes. Spoon rice custard into bowls and top with peaches. Serve warm.
