For something a bit more exotic at your next barbecue try these Italian chicken patties.
Ingredients
- 500g chicken mince
- 1/2 cup fresh breadcrumbs
- 1 egg, lightly beaten
- 1/4 cup semi-dried tomatoes, chopped
- 2 tablespoons finely chopped fresh basil
- Olive oil cooking spray
- 4 x 2cm-thick slices ciabatta bread
- 1/2 cup Taylor’s Avocado and garlic dressing
- 4 butter lettuce leaves
- 2 roma tomatoes, thickly sliced
- 1/3 cup shaved parmesan
Method
- Step 1Combine mince, breadcrumbs, egg, semi-dried tomatoes and basil in a large bowl. Shape mixture into four oval-shaped, 2cm-thick patties.
- Step 2Spray a barbecue plate or chargrill with oil. Heat on medium-high heat. Cook patties for 4 to 5 minutes each side or until cooked through.
- Step 3Meanwhile, spray both sides of bread with oil. Cook for 1 to 2 minutes each side or until browned. Spread toasted bread with 1/3 cup dressing. Top with lettuce, tomato, patties and parmesan. Serve drizzled with remaining dressing.

Notes
Variations:
1) For an ‘Aussie-style’ burger, replace chicken with beef mince, omit semi-dried tomatoes and parmesan and top with a fried egg, slices of beetroot and crispy bacon.
2) Looking to eat less meat? Replace patties with large flat mushrooms. Cook mushrooms for 2 to 3 minutes each side or until tender.
