A tasty meal doesn’t get easier than wrapping noodles in an omelette.

Ingredients

  • 8 eggs, lightly whisked
  • 2 spring onions (shallots), thinly sliced
  • 1 tablespoon cold water
  • 1 tablespoon peanut oil
  • 4 x 85g pkts Indomie Mi Goreng Instant Noodles
  • 1 cucumber, peeled into ribbons
  • 1 carrot, peeled into ribbons
  • Cherry tomatoes, quartered, to serve
  • Spring onions (shallots), thinly sliced, extra, to serve

Method

  • Step 1
    Combine egg, spring onion and water in a bowl. Heat 1 tsp oil in a wok over medium heat. Add one-quarter of the egg mixture. Swirl to coat. Cook for 2 minutes or until just set. Transfer to a plate. Repeat with remaining oil and egg mixture to make 4 omelettes.
  • Step 2
    Prepare the noodles following packet directions. Transfer to a bowl. Add cucumber and carrot. Toss to combine.
  • Step 3
    Divide omelettes among plates. Top with noodle mixture, tomato and spring onion. Fold the omelettes in half.
