A tasty meal doesn’t get easier than wrapping noodles in an omelette.
Ingredients
- 8 eggs, lightly whisked
- 2 spring onions (shallots), thinly sliced
- 1 tablespoon cold water
- 1 tablespoon peanut oil
- 4 x 85g pkts Indomie Mi Goreng Instant Noodles
- 1 cucumber, peeled into ribbons
- 1 carrot, peeled into ribbons
- Cherry tomatoes, quartered, to serve
- Spring onions (shallots), thinly sliced, extra, to serve
Method
- Step 1Combine egg, spring onion and water in a bowl. Heat 1 tsp oil in a wok over medium heat. Add one-quarter of the egg mixture. Swirl to coat. Cook for 2 minutes or until just set. Transfer to a plate. Repeat with remaining oil and egg mixture to make 4 omelettes.
- Step 2Prepare the noodles following packet directions. Transfer to a bowl. Add cucumber and carrot. Toss to combine.
- Step 3Divide omelettes among plates. Top with noodle mixture, tomato and spring onion. Fold the omelettes in half.
