Delicious pieces of ham add a meaty touch to this hearty pasta dish.
Ingredients
- 400g spaghetti
- 1 tablespoon olive oil
- 250g button mushrooms, sliced
- 1/3 cup (80ml) thickened cream
- 3 eggs
- 250g sliced ham, cut into thin strips
- 1/2 cup (45g) shredded parmesan
- 2 tablespoons chopped fresh continental parsley
- Salt & freshly ground pepper
Method
- Step 1Cook the pasta in a saucepan of boiling water according to packet instructions or until al dente.
- Step 2Meanwhile, heat the oil in a frying pan over a medium-high heat. Add the mushrooms and cook for 4-5 minutes or until golden. In a jug, whisk together the cream and eggs until well combined.
- Step 3Drain the pasta and quickly return to the pan. While the pasta is hot toss through the egg mixture, mushrooms, ham, parmesan and parsley until well combined. Season with salt and pepper. Serve immediately.

Notes
You can return the pasta to a low heat if desired, but do not overheat as the eggs scramble and the pasta will not have a lovely coating sauce.
