2 cups toasted fruit muesli (see note)
1/2 cup chopped red glace cherries
2/3 cup sweetened condensed milk
200g dark chocolate, chopped
Step 1Preheat oven to 180°C/160°C fan-forced. Line 2 baking trays with baking paper.
Step 2Place muesli, cherries and milk in a large bowl. Stir to combine.
Step 3Place tablespoons of mixture, 5cm apart, on prepared trays. Using a small spatula, flatten into 8cm rounds. Bake for 10 to 12 minutes or until dark golden. Cool on trays.
Step 4Place chocolate in a microwave-safe bowl. Microwave on high (100%) for 1 to 2 minutes, stirring every 30 seconds with a metal spoon, or until melted and smooth. Set aside for 2 to 3 minutes or until chocolate cools and thickens.
Step 5Using a spatula, spread chocolate over base of florentines. Place, chocolate-side up, on a wire rack. Set aside until chocolate has set. Serve.
