Damper is a traditional Australian bread. It is delicious smothered in pesto, cheese, grilled mushrooms and spinach.
Ingredients
- 2 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 4 large flat mushrooms, stalks removed
- 120g mozzarella cheese, sliced
- 4 damper rolls, halved
- 1/3 cup basil pesto
- 50g baby spinach
- 1/3 cup semi-dried tomatoes, chopped
Method
- Step 1Preheat barbecue grill on medium-high heat. Combine garlic and oil in a bowl.
- Step 2Brush garlic oil over both sides mushrooms. Barbecue, stalk side down, for 6 minutes or until almost tender. Turn and top with cheese. Cover with barbecue hood or upturned roasting pan. Cook for 3 minutes or until cheese melts. Transfer to a plate. Brush cut side of bread rolls with oil. Grill for 2 minutes or until toasted.
- Step 3Spread pesto over damper bases. Top with spinach, mushrooms and tomatoes. Season with salt and pepper. Sandwich with damper tops. Serve.
