Ingredients
- 600g beef stir-fry strips
- 3 teaspoons Moroccan seasoning mix (see note)
- 1 tablespoon sunflower oil
- 1/2 cup (100g) couscous
- Zest and juice of 1 lemon
- 1 small red onion, thinly sliced
- 1/2 cup roughly chopped coriander
- 1/4 cup raw almonds, roughly chopped
- 150g thin green beans, trimmed, blanched in boiling salted water for 2 minutes, refreshed in cold water
Method
- Step 1Combine beef, spice mix and oil in a bowl. Season with salt, then stand for 3 minutes.
- Step 2Meanwhile, place couscous, lemon zest and juice in a large bowl and pour over 1/3 cup (80ml) boiling water. Cover and stand for 4 minutes, then fluff with a fork. Fold through onion, coriander, almonds and beans, then season to taste.
- Step 3Heat the oil in a large non-stick frypan over medium-high heat. Cook the beef in 2 batches, tossing, for 2-3 minutes until seared. Serve the beef over couscous.
