Peas and beans taste delicious when infused with the flavours of leek and garlic.
Ingredients
- 60g butter
- 1 leek, white part only, thinly sliced
- 3 garlic cloves, crushed
- 300g sugar snap peas, trimmed
- 300g green beans, trimmed
- 2 cups (300g) frozen peas
Method
- Step 1Melt the butter in a large frying pan over medium heat until foaming. add the leek and garlic and cook, stirring occasionally, for 5 minutes or until leek softens.
- Step 2Meanwhile, cook the peas and beans in a large saucepan of boiling water for 2-3 minutes or until bright green and tender. Drain well.
- Step 3Add the pea mixture to the leek mixture and cook, tossing, until well combined and heated through. Remove from heat and transfer to a serving bowl. Serve immediately.
