Enhance the natural flavour of mixed berries with vanilla bean, sugar and a little stewing.
Ingredients
- 1/2 vanilla bean
- 500g frozen mixed berries
- 1/4 cup caster sugar
Method
- Step 1Halve vanilla bean lengthways. Scrape seeds from bean. Place berries, seeds, bean and sugar in a saucepan over low heat. Stir to combine.
- Step 2Cook, stirring occasionally, for 8 to 10 minutes or until berries have just softened. Remove from heat. Cool completely. Serve.
