These quick and easy minute steaks with broccolini & cannellini beans are ready in 17 minutes.
Ingredients
- 3 bunches broccolini, trimmed
- 2 tablespoons extra virgin olive oil
- 1 fresh long red chilli, finely chopped
- 2 garlic cloves, crushed
- 2 anchovy fillets, finely chopped
- 400g can cannellini beans, rinsed, drained
- 12 (about 50g each) beef minute steaks or sizzle steaks
- 2 tablespoons lemon juice
Method
- Step 1Place the broccolini in a heatproof bowl. Cover with boiling water. Stand for 2 minutes. Drain. Refresh in iced water. Drain.
- Step 2Meanwhile, heat 1 tbs of the oil in a non-stick frying pan over medium heat. Add chilli, garlic and anchovy. Cook, stirring, for 1 minute or until aromatic. Add the broccolini to pan. Season. Cook, stirring occasionally, for 3 minutes or until broccolini is tender crisp. Add cannellini beans and cook, stirring, for 1-2 minutes until warmed through. Keep warm.
- Step 3Heat 1 tsp of the remaining oil in a second non-stick frying pan over high heat. Season steaks. Cook 3 steaks, turning, for 1 minute or until browned and just cooked through. Transfer to a plate. Repeat, in batches, with remaining oil and steaks. Remove pan from heat and allow to cool for 1 minute. Deglaze pan with the lemon juice, scraping the pan with a flat edged wooden spoon for 30 seconds. Transfer to a bowl.
- Step 4Place 3 steaks on each plate. Top with the cannellini bean mixture and drizzle with pan juices.
Notes
Try replacing the steaks with 500g chicken tenderloins. Cook, turning, for 6 minutes or until cooked through.
