Give frozen peas a chance in this magnificent side dish!
Ingredients
- 400g broccoli, cut into florets
- 1 cup frozen peas
- 1/3 cup finely grated parmesan cheese
- 1/4 cup fresh mint leaves
- 2 teaspoons finely grated lemon rind
- 2 tablespoons lemon juice
- 2 teaspoons extra-virgin olive oil
Method
- Step 1Cook broccoli in a large saucepan of boiling, salted water for 3 minutes, adding peas for last 2 minutes. Drain. Transfer to a large bowl.
- Step 2Add cheese, mint, lemon rind, lemon juice and oil. Season with salt and pepper. Toss to combine. Serve immediately.

Notes
Broccoli, peas and mint will discolour once lemon is added. Serve with pan-fried white fish fillets, roast lamb or lamb skewers.
