Pack your picnic basket with these mini rolls and enjoy a day in the sun.
Ingredients
- 200g green cabbage, shredded
- 200g red cabbage, shredded
- 1 small carrot, grated
- 2 green onions, thinly sliced
- 2 tablespoons chopped fresh dill
- 1/2 cup coleslaw dressing
- 16 small soft dinner rolls
- 16 slices corned beef silverside
- 16 gherkins, halved
- 16 slices swiss cheese, halved
Method
- Step 1Place cabbage, carrot, onion, dill and dressing in a bowl. Season with salt and pepper. Toss to combine.
- Step 2Split rolls in half, being careful not to cut the whole way through. Place corned beef on base of each roll. Top with coleslaw, gherkins and cheese. Serve.
