A splash of liqueur makes this fruit salad taste sensational.
Ingredients
- 80ml (1/3 cup) fresh orange juice
- 2 strips lemon rind
- 2 whole star anise
- Pinch cardamom seeds
- 60ml (1/4 cup) Midori liqueur
- 1/4 rockmelon, deseeded, peeled, coarsely chopped
- 1/4 honeydew melon, deseeded, peeled, coarsely chopped
- 1/4 small seedless watermelon, peeled, coarsely chopped
- 1 x 250g punnet strawberries, hulled, washed, halved
- 1 tablespoon small fresh mint leaves
Method
- Step 1Combine the orange juice, lemon rind, star anise and cardamom in a saucepan over high heat. Bring to the boil. Boil, uncovered, for 3 minutes or until liquid thickens slightly. Remove from heat and set aside for 5 minutes to cool slightly.
- Step 2Strain the orange mixture through a fine sieve into a large serving bowl. Add the Midori and stir to combine.
- Step 3Add the rockmelon, honeydew melon, watermelon, strawberries and mint, and gently toss until well combined. Serve immediately.

Notes
Whole star anise is available from Asian grocery stores and specialty spice shops. If it is unavailable, use 1/4 tsp ground star anise instead.
