Ingredients

1 cup white long-grain rice, rinsed

2 cups cold water

1 1/2 cups grated tasty cheese

3 green onions, thinly sliced

310g can corn kernels, drained

2 eggs, lightly beaten

100g shaved leg ham
-
Watercress, to serve

Mayonnaise, to serve
Method

Step 1Grease and line a microwave-safe 7.5cm deep, 10cm x 19cm (base) loaf pan with baking paper, allowing a 5cm overhang at long ends.

Step 2Place rice and water into a microwave-safe bowl. Cover. Cook for 5 minutes on HIGH (100%) power, followed by 7 minutes on MEDIUM (50%) power. Stand 3 minutes.

Step 3Combine 1 cup of cheese, onions, corn, eggs, and salt and pepper in a bowl. Add rice. Stir well. Press half the mixture into prepared pan. Sprinkle with 1/4 cup of remaining cheese. Top with ham. Sprinkle with remaining 1/4 cup of cheese. Press remaining rice mixture over cheese.

Step 4Place onto a microwave-safe rack. Cook for 20 minutes on MEDIUM (50%) power or until firm to touch. Stand for 10 minutes. Serve with watercress and mayonnaise.
