medium Mexican Squash
cups all purpose flour
tablespoons dried shrimp powder
- Julienne baby Mexican squash into matchsticks and finely chop jalapeños
- If you can’t find dried shrimp powder, you can usually find them dried and whole that you can pulverize yourself. Otherwise substitute with 1 tbsp light soy sauce.
- Preheat frying pan with 1 tbsp vegetable oil to medium high heat. Ladle batter and spread to make a thin (2-3 layers of squash) pancake to cover the bottom. Fry for 5 minutes or until nicely golden on each side.
