Complete your Christmas in July feast with elegant maple-glazed carrots.
Ingredients
- 25g butter
- 2 bunches baby (Dutch) carrots, trimmed, peeled
- 1/4 cup maple syrup
- 150g baby spinach
- 1/3 cup flaked almonds, toasted
Method
- Step 1Melt butter in a large frying pan over medium heat. Add carrots. Cook, turning occasionally, for 5 minutes or until golden.
- Step 2Add maple syrup and 2 tablespoons cold water. Bring to the boil. Reduce heat to low. Simmer until liquid has almost evaporated and carrots are tender and caramelised. Add spinach. Cook, tossing, for 1 minute or until spinach has wilted. Add almonds. Season with salt and pepper. Toss to combine. Serve.
