Ingredients

Melted reduced-fat dairy spread, to grease

6 thick slices spicy fruit loaf, crusts removed

3 teaspoons reduced-fat dairy spread

435ml (1 3/4 cups) reduced-fat milk

60g (1/4 cup) caster sugar

1 egg
-
1 egg white
-
1 teaspoon vanilla essence

1 tablespoon lime marmalade

1 tablespoon pure icing sugar, sifted, to dust
Method

Step 1Preheat oven to 160°C. Brush twelve 50ml-capacity ovenproof dishes or ramekins with the melted dairy spread to lightly grease. Place on a baking tray.

Step 2Lightly spread the bread slices with dairy spread. Cut each slice into 16 small triangles. Place 8 triangles in each dish with the corners pointing upwards.

Step 3Whisk milk, sugar, egg, egg white and vanilla in a jug until combined. Carefully pour mixture over bread triangles. Set aside for 15 minutes to soak.

Step 4Melt the marmalade in a saucepan over low heat (see microwave tip). Use a pastry brush to dab the marmalade onto the surface of each uncooked pudding. Bake in preheated oven for 20 minutes or until puffed and a round-bladed knife inserted in the centres comes out clean.

Step 5Remove from oven and dust with icing sugar. Serve warm as puddings will lose height on standing.

Notes
Microwave tip: Heat the marmalade in a small heatproof, microwave-safe bowl, uncovered, on Medium-High/650watts/70% for 30-40 seconds or until warm.
