Author Notes: This is an adaptation of my husband’s grandmother’s Doris’s, Lazy Pie. We added ground flax seed to the crust, reduced the sugar and fat and, enjoy this frequently. The Lazy Late Winter comes from using the remaining frozen fruits you have in the freerzer from last year’s harvest, therefore making room for the new Spring vegetables, if you really need room in your freezer. You can also use canned or fresh fruit as well. —Witch in the Kitch

Ingredients
for the crust

cup non-bleached flour

cup sugar, raw or brown – white works too

tablespoons ground flax seed

teaspoon baking powder

dash salt

cup milk, soy or almond milk or juice from thawed fruit

tablespoons butter
fruit layer

cups frozen blackberries,, peaches or blueberries

dash sugar or stevia to sweeten if desired
Directions
- thaw and drain fruit, reserving juice for batter
- sweeten fruit if desired
- set aside while constructing batter
- mix flour, sugar, ground flax seed, baking powder and salt. add milk or juice and stir by hand to combine.
- preheat oven to 350 degrees
- melt butter and bruch interior of an 11 inch tart pan, place tart pan on a cookie sheet
- pour prepared batter into buttered tart pan, spreading to cover bottom
- add fruit on top leaving a slight 1/2 border if possible
- place cookie sheet with tart pan in center of oven and bake 25 – 30 minutes or until batter has transformed into a golden crust
- cool twenty minutes or more prior to serving
- this is amazing warm from the oven or at room temp with or without ice cream
