It takes just six ingredients to create a fabulous meal — here’s the proof!
Ingredients
- 300g green beans, trimmed
- 50g feta or marinated feta cheese
- 1/2 cup (50g) semi-dried tomatoes, halved
- 1/2 cup Sandhurst pitted kalamata olives
- 2 tablespoons lemon juice
- 4 lamb forequarter chops
Method
- Step 1Cook beans in a saucepan of boiling water for 1 to 2 minutes or until bright green and just tender. Drain. Refresh under cold water.
- Step 2Drain feta, reserving 2 tablespoons oil mixture. Place beans, feta, tomatoes and olives in a bowl. Drizzle with lemon juice and reserved oil. Season with salt and pepper. Toss to combine.
- Step 3Spray a barbecue plate or chargrill with oil. Heat over medium-high heat. Cook lamb for 4 minutes each side for medium or until cooked to your liking. Serve with bean salad.

Notes
Budget tip: Use 8 lamb sausages instead of chops and save around $2.81 in total. In step 3, cook sausages, turning, for 8 to 10 minutes or until browned and cooked through.
