Lamb sausage and salad pitas
Lamb sausage and salad pitas

For a relaxed barbecue dinner, put all the ingredients in bowls on the table so everyone can assemble their own.

Ingredients

  • 1 small red onion, thinly sliced
  • 4 thick (or 8 thin) lamb sausages or beef sausages
  • 4 pita bread rounds
  • 250g hummus
  • 2 cups mixed salad leaves
  • 1 cup fresh mint leaves
  • 1 cup fresh parsley
  • 2 tablespoons unsalted pistachios, slivered or chopped
  • 1/2 cup (140g) thick Greek-style yoghurt
  • 2 teaspoons sumac (see note)

Method

  • Step 1
    Place the onion in a bowl, sprinkle with salt, then stand for 10 minutes to soften.
  • Step 2
    Meanwhile, preheat a chargrill pan or barbecue on medium-high heat. When hot, cook the sausages, turning, for 6-8 minutes until cooked through and browned all over. Slice each sausage into 2-3 pieces on an angle.
  • Step 3
    Gently warm the pita on the grill, and rinse and drain the onion. Spread the pita with hummus, then serve with the sausages, onion, salad leaves, herbs and pistachios. Drizzle with yoghurt and sprinkle with sumac.

Notes
