For a delicious bake the whole family will love, try this budget-friendly combination of lamb mince, Mediterranean-style beans, eggplant and potato.
Ingredients
- 1 large (400g) eggplant, thinly sliced lengthways
- 60 ml (1/4 cup) olive oil
- 1 onion, chopped
- 500g lamb mince
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 400g can chopped tomatoes
- 420g can Heinz® Beanz Creationz™ Mediterranean Style Beanz
- 2 potatoes, peeled, thickly sliced
- 200g (2 cups) pizza cheese
- Lemon wedges, to serve
Method
- Step 1Preheat oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper. Lay eggplant on trays and drizzle with 2 tbs of oil. Season well and bake for 10-15 minutes, until tender.
- Step 2Meanwhile, heat remaining oil in a pan on medium. Cook onion for 5 minutes, until softened. Increase heat to high and add lamb mince. Cook stirring constantly to break up any lumps, for 5 minutes, until brown. Add cumin and cinnamon and cook for 30 seconds until combined. Add tomatoes and Beanz Creationz™. Reduce heat to low and simmer, covered, for 10 minutes.
- Step 3Microwave potatoes on high (100%) power for 5 minutes, until tender.
- Step 4Grease an 8-cup baking dish. Lay potatoes over the base of prepared dish. Top with a layer of eggplant and half of the mince mixture. Repeat eggplant and mince layers. Scatter over cheese and bake for 20 minutes, until golden. Serve with lemon wedges.
Notes
Tip: Use a jar of chargrilled eggplant. Par-boil potatoes instead of microwave if you prefer.
